NUTR 414: Advanced Nutrition & Metabolism I

Prerequisites: NUTR 214, CHEM 122, Biol 310 & 311 and admission to upper division NUTR

Presents a detailed study of the macronutrients and their role in human intermediary metabolism and physiology.

 

Detailed Description of Content of Course

The purpose of this course is to present the biochemical, metabolic and physiological principles and their interrelationships to normal nutrition; and update on current scientific discoveries and/or concepts related to human nutrition. Major area of nutrition which will be covered include:

  • Cellular physiology and its role in nutrition
  • Gastrointestinal physiology and its role in cellular nourishment
  • Digestion absorption, transport and metabolic utilization of the energy-yielding nutrients, protein, carbohydrates and lipids
  • Energy transformation and interrelationships among the nutrients

 

Detailed Description of Conduct of Course

Course instruction strategies may include, but will not be limited to, lecture, discussion, class activities, problem based learning, case studies, videos, guest speakers, and student presentations.

 

Goals and Objectives of the Course

Upon successful completion of this course, the student will be able to

  • describe the physiology and process of digestion and absorption of macronutrients
  • identify chemical properties, reactions, and metabolism of carbohydrates, lipids, and protein.
  • identify how the metabolism of macronutrients provide for health and identify what processes in metabolism are dysfunctional in disease
  • integrate knowledge of macronutrient metabolism to current issues and research in nutritionally related health and diseases.

 

Assessment Measures

Assessment measures may include, but not limited to exams, assignments, projects, case studies, oral presentations, and class participation.
